Can anyone recommend a sweetener for baking, no matter what I look at there are always negative views on them.

You will always get varying views about sweeteners and which and how you use then is very much a personal decision and your attitude to artificial sweeteners.
Choosing the right one for the purpose is important.
The Canderel website is quite good as it describes their range of sweeteners and what they are suitable for.
The sugarfreelondoner has recipes for lots of sweet and savoury dishes.
As you cut down on sugary foods then things will tend to taste too sweet so you can usually reduce any amount suggested in the recipe.
 
Erythritol based sweetners are, i think, best, as they provide bulk as well as sweetness. They don't raise my bs. Though its probably best to not to have too much....
 
Being pre-diabetic I try and limit carbs to 130g per day. This means that apart from naturally occurring sugars I have to be careful not to add extra sugar. I read a lot about sweeteners and am not happy to use them to sweeten sharp fruits for example. There seems to be more positive feedback on Erythritol. I don’t really know what this is (apart from being a sweetener)….if it would be suitable for me….and if I could use it in the cake I occasionally bake using almond flour. I would be grateful for any info…..

There has been bad press about erythritol so do your research and make your own mind up. Be careful of not using too much though as it can cause stomach upset if you have too much in one go.
