Coffee with double cream works for me, nothing solid until PMI’m struggling with quick low carb breakfasts any ideas please
I have often wondered why breakfast has to be something different from any other meal. In India, I had curry for breakfast. In Indonesia, I had nasi goreng.
Ok, neither of these are low carb so not the answer you are looking for., But they are examples of thinking outside the box. What low carb things do you eat other times of the day and can you eat them in the morning?
It doesn't have to be a fry up or yoghurt or fruit.
If you want something more "traditional", I often make myself egg muffins. These are little fritatas made in muffin cases. They contain beaten eggs plus whatever I have in the cupboard chopped up small. I have included cheese, tomatoes, spring onions, herbs, courgettes, peppers, ... unless you are vegetarian, you can include ham or chopped up (cooked) sausage.
I pour this mixture into muffin cases and put them in the oven at a medium temperature (gas mark 5ish) for 15 minutes, until they are solid. They keep for 5 days to a week in the fridge and can be very quickly reheated in the microwave or eaten cold.
