They really do look tempting! Could you use oat bran to make them next time instead of oat meal.... or the chopped almonds and coconut in your case or perhaps a mixture of all 3. Can't sit here and look at them anymore because I really do want one..... actually 2 or 3 or more.... I have no self control once I start. 🙄

nice. they look really good and at 2g carbs each i'll take 2 for my mid afternoon snack. They look good.

They look lovely @Martin62

Did they taste as good as they look?

This week I baked some large " oatmeal " cookies, no actual oatmeal, to get the texture I chopped sliced almonds and coconut. 2.1g carbs per cookie.View attachment 21939

Hi Sharon, Leadinglights is correct , it is a recipe from sugarfreelondoners website keto oatmeal cookies . I do tend to get most of my recipes there , but sometimes do adapt them to add in my own flavours etc.
If its cakes your missing , have a go at some of her recipes I hadn't baked a thing before in my life but over the past year I have baked various cakes, cookies etc , the recipes are very easy to follow .
Kind regards
Martin

.... and I have to say Martin's culinary experiments look blooming lovely!

Thank you Martin, I have just taken a look at the webpage and definitely going to have a go at making some of the cakes and cookies.
I have been on my diabetic journey for a month now and haven’t eaten one cake in all that time.
