Hi All. I became prediabetic during the pandemic and sadly as of last week diagnosed type 2. I felt very depressed initially, the loom of type 2 is something I had always managed to ward off in the past. I also have high cholesterol. The Doc can't medicate it until they know if I have anything worse than fatty liver. I also have high blood pressure and on two medications for it. I have PCOS as well which was only diagnosed a few years ago. Since the news, it has really scared me into sense (instead of being like a health/unhealthy yo yo and convincing myself that I deserved a takeaway, chocolate bar etc). Since finding out, I have cut carbs right down. Gotten rid of all starchy veg. I don't drink alcohol or have ever really bothered with fizzy drinks and cut all rice out a while ago. I've also returned to intermittent fasting and I'm happy to report I feel for once that I have control and I'm barely hungry either. I see the diabetic nurse soon and I believe they will start me on metformin. I eat very little dairy (I would avoid it all if I could), I don't eat meat out of choice, but I eat fish. I'm also wheat intolerant so my diet is very limited! If anyone else on here is veggie, vegan or pescatarian I would welcome some recipes. It's been really encouraging reading posts of weight loss, remission and tips. I look forward to reading more.

Congratulations on the progress you have made. Do you eat eggs? Eggs are a great food for Type 2 diabetics.

Why would you avoid all dairy if you could? Full fat dairy and fatty cuts of fish and meat form a large part of most 'Type 2 healthy ' diets.
Berries are among the fruit with the lowest carb, along with watermelon, olives, avocado and rhubarb (which is really a vegetable), they go very well as a dessert or a breakfast with some full fat greek yogurt to which seeds and or tree nuts can be added.
 
If anyone else on here is veggie, vegan or pescatarian I would welcome some recipes.
Hi, I'm a lacto-ovo vegetarian (so eggs, milk, cheese, but no fish). I make myself home made soups, chillis, curries/daals, roasted broccoli/cauliflower/mushrooms with curry paste on, hummus, omelettes, Greek yogurt and berries (raspberries/blueberries/blackberries/strawberries), tofu, stir fries, Quorn, spaghetti bolognaise (with strips of courgette instead of spaghetti, and soya/textured vegetable protein instead of mince) and other stuff too.
What sort of foods do you like to eat? Base your meals around them - for instance, I love curry, so do tray bakes of veggies with curry paste on, perhaps with some quorn pieces in, served with chopped up tomatoes, cucumber and a teaspoon of mint. Or Mediterranean vegetables, roasted in the oven with halloumi cheese or smoked tofu?

Welcome @HBomb 🙂 I’m pescatarian but Type 1 so have more flexibility with my diet. What kind of meals do you like? Have you looked at the Diabetes U.K. recipes. They have the carbs so you can make an informed choice:

Hi. Thanks for your encouragement! I don't eat eggs anymore because of ethical reasons, the same reason I would avoid all dairy of I could. But out of curiosity do you know if eggs are safe for fatty liver and high cholesterol? I've read so many conflicting things I don't know what to believe. At the moment I am weighing all things up in regard to food. Cooking at home is no problem, but but really difficulty is if I got out anywhere to eat. Olives and avocado I love so that's good. Fruit I have never been that keen on, but I eat Strawberries and apples. Are apples a good choice or bad choice? Again I've read conflicting things! I use Strawberries in a health desert I discovered wen I did keto a while back. I just fear it will awaken my dessert craving tast buds if I have it ha ha

Your suggestions sound really nice. I had not thought of the curry paste so that is definitely going on my shopping list. I eat quorn and am able to make a nice healthy chilli using quorn mince. I would love a nice Korma or tikka recipe and Thai green curry too would be nice. A satay sauce recipe too. Now I'm feeling hungry lol. I think it's mainly anything with a sauce or salad dressing that I am finding extremely limiting because of the sugar in everything! I was very relieved today that nandos peri sauce has no sugar in it. Sadly it was the more expensive one that was absent of sugar, but we can't have everything

Pataks curry pastes rather than sauces are very low carb, and they do a good range or dry spices from Spicetice are good.
I make a cauliflower, squash and chickpea curry and sometimes add paneer or boiled eggs.

I usually get Patak's, the madras is my favourite at the moment, but they're all good.

I have a really nice recipe for cauliflower and halloumi curry. Obviously the halloumi is dairy but I suppose you could sub tofu. Personally I prefer to make curry from scratch using spices rather than a curry sauce, but I usually just "wing it" rather than following recipes exactly. Of course that usually means that no 2 curries I make are alike but who cares!
 
I have always used curry powder when cooking for myself - I add a little to pep up leftover soups, as well as for actual curries - I use roughly chopped cauliflower rather than rice.
 
@HBomb Eggs are almost perfect balance of Protein and healthy fats. Yes, they do contain a little cholesterol, but cholesterol is essential for life: without it brain would not function (practically made of the stuff), immune system wouldn't work, no genders would exist since sex hormones are made from cholesterol.
85% of the Cholesterol found in the body is made by the body, we just absorb what extra we need from our food. The brain makes 100% of it's own cholesterol - just to be sure it never runs out.
It has been over 10 yrs since it was shown that the amount of cholesterol in the diet has no relation to the amount of cholesterol in the bloodstream.

It is carbohydrates particularly fructose, and alcohol which cause 'fatty liver'. Dietary fat has virtually no effect on it, in fact fatty food (without the carbohydrates) doesn't make you fat. I weigh less eating Low Carb an Normal Fat than I did when eating Low Fat but High Carb (since what else was there to eat since most protein comes with fat).

After many years of trying I never seem to be able to get it quite right from individual spices but do sometimes try, some are better than others.

My son in law who is from Pakistan and had never cooked in his life before now does most of the cooking and makes fab curries from scratch, sometimes a bit on the hot side but brilliant flavour.
He didn't even know how to change a light bulb when my daughter first met him.

The vegan ‘Bosh’ boys have a cracking Thai Red curry in their first book (orange spine) that we make a lot. I make a batch of the curry paste and freeze it in an ice cube tray (2-3 cubes is the perfect amount of flavour for us). then it’s just whatever veg we fancy, a can of coconut milk and a smidge of soy sauce, plus some other finishing touches.

There’s a green curry paste recipe in ‘Bish Bash Bosh’ that I really must make again!

Lots of their recipes are available free online, and mixing the paste myself means I know exactly what goes in it 🙂

I do a paneer korma. (paneer indian cheese) you can also use Tofu. Delicous. Serve with cauliflower or konjak rice.
 
Cholesterol is a controversial subject on here.
It's good
It's bad
Food affects your levels
Good doesn't
Your brain is cholesterol....
It goes on.

Try a diet.
Stick to it.
Get your cholesterol tested after 3 months.
You'll find out what is true for you.
