Relationship to Diabetes
Type 2
Serves 4 at 190 cals and 11 gm carbs per serving.

6 skinned and de-veined lambs kidneys, chopped into 1" pieces
12 rashers of streaky bacon, chopped
5ox button mushrooms, quartered,
1 large red onion, chopped

2 heaped tsp cornflour
4 tbsp water
4tbsp dry sherry
2 tbsp double concentrate tomato puree

seasoning to taste
Fry Light

Mist a large saucepan with Fry Light and gently cook the onion for 7 minutes
Add the kidneys, bacon and mushrooms and gently cook for a further 3 minutes
Mix the cornflour with 2 of the tbsp water
Add the rest of the water, sherry and tomato puree
Stir into the meat mixture until the sauce starts to thicken
Cover and steam gently for a further 7 minutes.

Serve with cauliflower rice and green vegetables.

Can't stand kidney :( but the same recipe would work well with chicken livers as I make something very similar and it is one of our favourites. 🙂

Good idea. Both chicken livers and lambs kidneys were my dad's favourite, so Mum used to make this for the two of us. She and my brother dined on egg and chips instead!
 
Love kidneys! Usually go for pigs rather than lambs, cheaper and imo tastier. Good in stir fries, as is liver.
