Hi,

Just wondered if anyone would like to share some vegetarian ideas and carb content.

Type 1 diabetes is not usually a reason to change your diet.
I eat a primarily vegetarian diet. The only difference since my diabetes diagnosis is that I count the carbs but, what I eat is standard veggie fare.

I am always trying out new recipes. Recent new additions to my diet include
Mushroom stroganoff
Aubergine "meatballs"
Spiced chorizo parcels

The carb count depends what I accompany the dishes with. For example, I have had the aubergine balls with spaghetti and zoodles. The spaghetti dominates the carb count. The zoodles add nothing. You could have the stroganoff with recipe our cauliflower "rice".

Try making a Niramish, you can use a variety of veg, you could add a little Lidl Tikka Massala sauce if you like.
 

This is one of my favourites. We usually have a toasted pita bread with it, which obviously adds to the carbs. Do you eat eggs? If so something like shashouka is nice and easy. Made with peppers rather than beans its less carbs if you wanted to go that way.

That sounds like my sort of meal.
 
had meat free lunch today, cheese & tomato omelette with 2 slices of sourdough toast with lashings of butter. Try to eat few meals every week meat free.

We‘ve been eating a sort of vegan / veggie / flexitarian mix for a number of years now. Lots of our old favourite recipes have been gradually adapted, but our most significant find vegan-wise has been the Bosh books. We had two well-worn ones, and someone bought us a third. Loads of ideas, and useful components and strategies that then get added into other things.
 
I’m not vegetarian (because I eat fish sometimes) but I do eat mainly vegetarian and vegan food. I like Cheese and Lentil loaf, bean chilli with rice, lentil lasagne, cashew nut paella, risotto, various pastas, Mexican refried beans with tacos, etc etc

There’s no need to restrict your carbs if you’re Type 1 and they provide nutrition and taste. Most Type 1s do not eat very low carb. There’s absolutely no need to.

Not had mushroom strog for decades - it was one of the vegetarian options on a centre of Birmingham Hotel (the Grand, opposite the Cathedral, in Colmore Row) dinner menu when you went to any evening 'do' there - and have to say though not vege - I used to choose it more often than not, as being much more enjoyable to consume than the churned out time after time bog standard not vege offerings!

We did have a vegetarian 'in our gang' - and she reckoned it was pretty good too - though not as good as hers!
 
We had (vegan) aubergine banh mi last night it was amazing so I thought I would share the recipe:

Roasting the aubergine in the marinade makes it tender and flavoursome, the picked vegetables make a lovely contrast and, although I don't think the avocado is authentically Vietnamese, it works.
Carbs? Depends on the bread you use. I sometimes using baguettes and sometimes replace them with bao buns.

I am surprised no one has mentioned it (especially everydayupsanddowns), but this site does have a recipe section, which shows the carb content for the dishes, and over half of which are vegetarian.

Tangently, but there are 507 recipes on there, of which 240 vegetarian, of which 95 are vegan, and one of those is for chips. Literally chips. Potatoes. Oil. Coat potatoes in oil. Bake. Chips.
It is a recipe for chips.

It sounds really nice. If you like aubergines then The Diabetes weight loss Cookbook by Caldesi has quite a few recipes using aubergines and also quite a lot of the recipes are veggie.
