Meal tonight was roast pork loin joint seared in a pan then roasted for 1 hour (it weighed about 2pounds) Then I took off the fat and roasted it until it was crackling We had roast potatoes for husband and roast celeriac and swede for me with garlic cloves in with them for the last 1/2 hour Broccoli caulli and green beans I made a sauce by frying onions in butter with a few sage leaves added the juice from the pork and wizzed it up .
Pud was a handful of blackcurrant fresh from the garden (still warm from the sun) with full fat yoghurt and double cream .Just going to enjoy a glass or 2 of Merlot

Sounds delicious. No roast pork for me tonight but I will confess to keeping the odd packet of pork scratchings in the cupboard for when I really fancy a savoury snack (since crisps are off the menu) and I have indulged in one this afternoon. Currently enjoying a second glass of port... both naughty but nice!
 
Couldn't have managed that tonight as we had a cooked lunch today though it sounds gorgeous - but any other day you'd like to invite me round for dinner I'd accept and even share a bottle of Minervois with you both! LOL If not, happy to bring more Merlot - always slides down the throat a treat !
