Welcome 🙂 You can eat whatever works for you @Tom lumberjack Sandwiches, fruit, yoghurt, etc etc. If you find your blood sugar is spiking too high, you could try having your bolus/meal injection a little earlier. If you have a physical job and burn off the carbs, then you might need less insulin for your lunch than you have at home when you’re less energetic.
The diet recommended for Type 1s is the same healthy diet recommended for everyone. We just have to use our insulin - easier said than done, I know. I tend to stick to the same few lunches so I know the carbs and have a good idea of how my blood sugar will pan out.
Tbh when doing physical work my issue was keeping bg from falling rather than going high after lunch, so typical food was sandwiches fruit with reduced bolus dose.
