Microwave squash and/or pumpkin.

Saw this on a foodie programme, and it is more a means of cooking than a recipe, so thought it would be Ok to put it here. Cut the top off a squash or small pumpkin, scoop out seeds and pith. Put in a knob of butter/olive spread, condiment of choice, put lid back on and microwave on full power for 4 - 5 mins. Hey presto - lunch! Be careful tho' it gets v. hot. If it's not enough, you could add a large salad perhaps.

I've tried a little blue cheese inside as well - nice! Lidls are selling small squash and pumpkins for about 89p at the mo.

Apparently high in vit A. Sorry don't know carb value?
