What is considered a blood glucose spike?

This confuses me. What values are considered spikes and what values can BG go up to in the immediate post-eating even for normal non diabetics?

I'm worried despite great HBA1c control I am showing diabetic retinopathy indicating poor BG control so this is deeply concerning.

I've now gone back on a strict low/no carb diet but does that mean I can't have spikes way about 4-5 for fear of retinopathy effects? Really confused nobody seems to be explaining this to me well.
 
Because an HbA1C is an average the lows can even out the highs and hide some high after meal levels, so monitoring after meal levels will give you a better idea of what foods are causing your blood glucose to increase by more than a 2-3mmol/l after 2 hours, you would hopefully keep the 2hr after meal level to be no more than 8mmol/l.
