What can Nan eat?

So I got a call from my father earlier. My nan who has recently been put onto insulin is starting to feel hungry in the evenings.

I suspect it's connected with the fact that her levels have come down from ~20 to ~10 mmol/l. But also because she is on a mixed type insulin with a fairly long tail.

Dad doesn't have this problem because he is on basal-bolus regime and almost *never* snacks in the evening (Hah! Apart from nuts that is).

So he was wondering what I would suggest. I've so far said either a small amount of crackers and cheese or maybe a square of good quality dark chocolate (not that diabetic stuff they keep getting her). Or maybe something protein or fat based.

She does have most of her own teeth still! 😉 But nuts might be a little to hard and dry.

Would anyone suggest anything else?
 
My late MIL, 70+ and T2, used to have a one slice (of bread) cheese sandwich about 8.30 each night.

I've got an easy recipe for cheese muffins, made with ground almonds so obviously low carb - if she's up to throwing a few ingredients together and baking them - oh - and likes cooked cheese! Or a slice of frittata - doesn't have to be a huge one to last her all week, can cook mini ones inside either an egg ring or even in the biggest pastry cutter in your set, stood in the frying pan - or bake minis in cookie cases or tray.
