I love watermelon, but I'm told I can't have it cos it's full of sugar. 😡 I used to do the same with it as with the pineapple. Freeze it and chuck it in drinks or eat it instead of ice cream.
Watermelon is high GI, but low GL because in order to consume the amount containing 100g carbs (as is done to get the GI figure) you have to eat a HUUUUUGE amount! GL takes portion size into consideration and since it is mostly water a portion doesn't actually contain much in the way of carbs. If you see what I mean! 🙂

It's one fruit I dislike, but Tia eats lots and lots of fruit. I am growing strawberries, Raspberries and Gooseberries ( my favourite ) in the garden.
