Hi all,
Hannah (my 17 year old) has organised a camping party in the garden for tomorrow - i have been nominated to make my chicken curry. She just informs me that there is a vegetarian coming and its this girls birthday - so can i make something wonderful for her! I know some of you are veggies - so does anyone have a lovely recipe for something special?

Please could this stay on this board until tomorrow morning or i may not get any reples? Thanks in advance. :D Bev
 
Hi bev

Although I'm not a vegetarian, my sister is and she make a great potato and hard boiled egg curry...must admit it does'nt sound appetising but it tastes great.

how about using sweet potato and aubergene (or other veg, that's just my preference!)instead of chicken for hers, or use quorn pieces??

MMmm yes quorn pieces are lovely in curry, so much nicer than chicken.

There are some ideas on the recipre thread too. ALso try going to the library and seeing what veggie cooke books they have.
 
My partner always claimed that he wouldn't like vegetarian food🙄 but now thinks that quorn curry is more than just as good. Bev all you need to do is to use the quorn chunks instead of the chicken if you want to produce a vegetarian substitute easily

Damn and blast it - i went to the supermarket this afternoon with the intention to buy the quorn and make a seperate curry. But i had the 2 little darlings with me - and i wasnt concentrating - so have come home with everything but!
So now i am about to try to make a curry out of potato, veg and perhaps a couple of boiled eggs thrown in! I am also keeping an eye on Alex jumping on the trampolene with his 2 friends - he has had 2 hypos already - so i dont want to pop out just in case! He is also having a sleepover - but not in the tent thank goodness - i dont fancy coming down in the middle of the night to test him in the dark and falling over bodies everywhere! So there will be 9 sleeping over tonight - i must be mad!:D Bev
