I’ve recently been diagnosed with Type 2 and have had the stern ‘you must lose weight’ talk from the (actually very friendly) GP.

This has set me on a no (or very low) carb diet, and got me returning to the gym. To my amazement I’ve shed 1.5 stone in a month, which is most encouraging.

I’m aiming to have a good source of protein with vegetables each meal. What has surprised me is the prodigious quantity of veg I seem to be getting through. A veg shop that used to last me a week now seems to be gone in a few days. Never have I eaten so many greens. Never before have I bought celeriac two at a time. Come to think of it, never before have I bought celeriac.

Is this anyone else’s experience?
 
I eat lots of vegetables myself @WillyG and love them, so I just want to say Well Done - both on your weight loss and your new-found veggie love 😎
 
I still find a big head of savoy cabbage lasts me a week, but I do love it! As a snack I have it shredded and done in the microwave with a small knob of butter and a few thin slices of salami on the top, so the fat from the salami goes into the cabbage and the salami on the top goes crispy. Yum!
 
Not so heavy on veg but boy do I get through salads.
 
We do get through a lot of veg but there again we did before and have lots of our own produce in the summer, not so much just now other than leeks and stuff that was frozen.
 
Yes, protein and mountain of veg. Make sure you get enough protein, 1.x grams per kg body weight per day.
