Hey I'm not sure if this is going to make much sense so please do ask if you need anything clarified, if I were going to be roasting vegetables would I be better to weigh mine out after they had been par-boiled before roasting? Any help would be seriously appreciated!! TIA 🙂 xx
 
Dunno, but if you have the caloric value for the fresh one use it, if you have the boiled one or both use the boiled one, because boiling adds water and you're gonna to lose some vitamins.
By the way on fresh vegetable I have found that nutrition facts could be different depending on what you're looking at.
