I am new to this and looking at thousands of packs. trying to keep everything low. when looking at per serving etc what is a good sugar level e.g 8g? At mo am trying to keep everything very low and have a low gi but getting confused

I remember seeing a leaflet called 'how much is too much' - general information for everyone, not just diabetics - I'll try and dig out the details for you. Combine this information with a good book about the principles of GL (Glycaemic Load - based on GI but easier to understand and more flexible, I think).

Here are links to a couple of good books I found useful and well written:

The links on this page give infrmation about food basics and what are high/low levels of fats, salt and sugar.
