Hi @Trace1 and welcome to the forum.
You may be surprised to hear, but fried food and fat in general doesn't raise blood glucose (in fact frying raises BG less than the same food cooked in other ways).
It is sugars and starches which means all digestible carbohydrates which give us problems.
So Sugars like Tropical fruit, all fruit juices, honey etc.
And Starches like potato, gains (including whole oats for many of us), pasta flour (which has a higher GI than does table sugar), baked goods.

But meat, fish, eggs, full fat dairy yes even hard cheese, don't hurt our Blood glucose, above ground eg and fruit normally treated as veg are also usually OK.

So that means we eat practically the complete reverse of what we were told was healthy (but probably actually contributed to our T2 diabetes)!

Use your BG meter to measure which foods suit your body. Because although it's avoiding carbs that's important to us, we all react differently to different carbs - only your BG meter will tell you how you react to a food item.
We do this by measuring our BG just before eating and then again 2 hrs later i.e. 2 hrs after starting to eat (not 2hrs after ending the meal). Aim for a rise of no more than 2 or 2.5mmol. Once you have your meals under control, aim for keeping the highest hr post prandial reading to no more than 8.0 or 8.5 mmol..

Welcome to the forum @Trace1

Sorry to hear that your BG levels are rising despite all your hard work. :(

The component that will be most responsible for raising your glucose levels in your menu are the sugars and carbohydrates, both obvious sweet things (which you’ve probably cut out already) but also natural sugars in fruit, and also starchy carbohydrates like the high fibre bread (and cereals, potatoes, pasta, rice and so on). That doesn’t mean that you have to avoid those things entirely, but reducing portion sizes and looking for some lower carb swaps here and there can be a very powerful strategy.

Hopefully with a few tweaks and changes to your menu, you’ll find a flexible, sustainable, enjoyable way of eating that suits you and gives you the BG results you are looking for 🙂
