I'm over my brother's for dinner. He has made a trifle. He thinks he has made an effort because the jelly is sugar free. So that leaves the custard and a topping of ameretti biscuits. Oh well, you only live once.:D
 
Slurp! 🙂 Trifle used to be my treat of choice on my Diaversary, although I couldn't bring myself to go for it the past couple of years! 😱 🙂

Never tried, but it shouldn't be too difficult. I normally make trifle with raspberries, as we grow loads of 'em, douse them in Kirsch ( alcohol helps the BGs down, I find) egg custard with artificial sweetener, plain whipped cream, that only leaves the sponge. Have tried making cakes with Splenda, though I don't usually bother, and just have a smaller piece of 'normal'. So that's a bit of flour, but offset by the protein and fat in the rest of it, shouldn't be too bad.
 
No sponge in this trifle, but he used Dream Topping instead of cream! I'll test my bloods in an hour.

Was 4.8 before trifle. 8.7 90 mins after!😱 dropped to 6.6 an hour after that.
 
They used to make sugar free dream topping, I used to prefer it to cream for some reason! Maybe because I could keep it in the cupboard in case of unexpected trifle needs! Making custard with unsweetened soya milk and sweetener reduces the carbs, that's what I do.
