Just had this for dinner after seeing recipe in a magazine.
Balsamic chicken and spinach (serves 2)
4 smoked back bacon washers
2 skinless chicken breasts
3 tablespoons balsamic vinegar
6 cherry tomatoes, halved
Large handful of baby spinach.

Heat oven 200/180 fan/gas 6. Lay the bacon between 2 sheets of cling film and using a rolling pin, roll over to thin the washers. Season the chicken breasts and wrap each between 2 rashers of bacon. Transfer to a small non stick tin and cook for 25 minutes.
Pour the balsamic vinegar over the chicken and cook for the last 2-3 minutes of the roasting time.
Heat a griddle pan and cook the tomatoes for 2 minutes.
Divide the spinach and tomatoes between 2 plates, top with a chicken breast and drizzle over the balsamic vinegar juices.
Carbs = 6g

I cooked the spinach rather than having it raw and I had 3 small new potatoes with it. Sorry I didn't get a picture. Was delicious.

The magazine was called Eat Healthy, this was the first issue. Loads of good recipes and quite a few low carb ones.
