Tomato, cabbage and celery soup

This is a really yummy, and very healthy soup based on something I tried on a trip to Hong Kong. I think it comes from Russia but its been adapted to make it veggie friendly, and vegan friendly too I think. I made this up as I went along so the amounts are not at all acurrate!

Ingredients:

3 Tomatoes,
1/2 white or sweetheart cabbage,
3 sticks of celery
2 carrots
Tomato puree
Veg stock
bay leaf
any other herbs you fancy!

Boil carrots, celery, cabbage, tomatoes and bay leaf in veg stock for about 15 mins. Add tomato puree and any other herbs - I just use anything that looks good from the garden. Simmer for another 10 mins or so. Eat with crusty bread and a chunk of cheese if you are greedy like me!!
 
I used (for Fireworks Nights) to make a homemade tomato soup (based on a recipe from a book I had called The Right Way to Cook) which was basically passata and onions, seasoned with soy sauce (a high-quality one, not adulterated with caramel or MSG as too many are -- I favour Kikkoman) and just a tiny bit of sugar. I've always hated tomato soup, as it's usually sickly oversweetened rubbish (I still can't stand tinned pasta in any form, for the same reason), but this recipe showed me what a proper tomato soup can taste like. 🙂
 
I made this and it was so yummy I immediately made another batch which I have frozen in small quantities. I added some chickpeas to make it a proper meal. Thank you for sharing the recipe.
