Is Tofu ok for Diabetes as seems low carb but pretty tasteless unless some suggested recipes/sauce etc?. Miso?
 
Yes, tofu is low carb. Try various ways of cooking it. You can even bake it. The best recipes are usually in vegetarian or vegan books 🙂 You don’t have to be vegan or veggie to eat tofu. Often your local library will have cook books you can borrow or you can look online.

Tofu is good in stir fries, curries and the like.
 
Scrambled tofu with onions and turmeric is also good. You can just look for a recipe online, there was other spices you could add. Turmeric gives it a nice colour.
 
Smoked tofu is nice too, and you can get tofu with basil and other flavours in.
I marinade cubes of plain tofu in crushed ginger and garlic, or soy/teryaki sauce or curry paste for a few hours, lightly fry them in oil and have them in a stir fry.
Miso: I've had miso soup, it's got a distincitve flavour, I do like it, but maybe not to everyone's tastes.

Tofu is nutritionally excellent for anybody ... but I juest really can't make myself like it. I eat a whole lot of edamame instead - raw young soya beans as they come, instead of being tofu-ised 🙂

How do you scramble it as it's so solid?

The ‘silken’ tofu has quite an egg-white type texture. Either actually labelled silken, or this type of ‘comes in a carton’ from Asda

We tend to press it for a short while between sheets of paper towel (30 mins ish), then crumble into stir fries for a plant-based ‘egg’ fried rice.

There are also firm tofus which are more fryable in cubes like paneer is.

Tofu is a great carrier for any flavours, as it doesn’t really have much personality of its own :D

I seem to remember having it in a Thai green curry in a restaurant and the texture was quite like paneer. /

Yes, I finely dice the onions, fry them a bit in oil and then add the tofu in the pan, so it also takes the flavour from the cooked onion. The brand I usually get, Toofoo, is easy to "crumble".
 
I have recently started using tofu
You might be able to find fresh tofu in health food shops, Chinese shops, and delicatessens, but it's more likely to be in the stiff card packets, a bit like fruit juices & UHT milk
I have tried two brands from supermarkets - Clearspring and Mori - Nu
It has a very soft constituency & texture, a bit like blancmange or soft boiled egg, so be careful when you open the packet or it can squash & collapse on you
Similarly cut it up with a sharp narrow bladed knife or it will break up

I've used it straight out of the packet in a salad, but it does tend to break up
Next I fried it gently, and that toughens it up
If you Search YouTube for tofu there are loads of recipes. I haven't tried any yet but my next time will be fried with onions, as above
