Welcome to the forum. I hope you will find some useful information about how to manage your condition. I always makes things more complicated when you have to juggle a couple of different conditions. You may find that the diet you need for the Coeliac may not be too at odds with a low carbohydrate approach which people find successful at reducing blood glucose. To help you find suitable foods for both conditions you may find that strategic testing of your tolerance to meals by testing before you eat and after 2 hours not only to identify foods which are not so good but find those that are perfectly OK.
Although this link may not completely fit with your gluten intolerance it may help you with some meal ideas and the do's and don'ts may be useful. There will be substitutions you can make I'm sure.

It always reminds me of a particularly fetching pale blue (it’s a colour reference in the Pantone Matching System 🙂 )
 
My beloved ex self employed colour printer tells me it's not ever so far off cyan itself, but definitely paler - could have been about the same shade actually we used on our wedding invitations that I'd describe as 'pale cornflower blue' not even knowing the word 'Pantone' previously!
