I tried this last night and it worked for me but let me know what you think.
For one.
1/4 of a large cauli grated (raw)
1/2 a green pepper chopped
A chopped shallot
A little oil for stir frying
The Thai bit:
1/4 inch piece of lemon grass
1/2 inch grated fresh ginger
1 clove of garlic (more if you like)
1/2 a de-seeded green chilli (add more if you like it hot)
A few leaves of basil (Thai basil if you can get it, but the other works as well)
A pinch each of coriander and cumin seeds
A little fresh ground black pepper
A pinch of salt
1 tsp light soy sauce
1 tblsp lime juice
1 tblsp coconut milk or a tsp of grated (fresh or dried) coconut
Chuck every thing listed under "The Thai Bit" in a blender and make a paste of it. It'll keep in the fridge for a day or two.
Use a ricer on the cauli or the largest holes on your grater.
Heat the oil in a large frying pan and stir in a tablespoon of the paste. Stir gently till it's heated through but don't let it brown, add the onion and pepper and fry for a minute or two then add the cauli for another minute, it doesn't take long and you don't want the cauli overcooked or it will disintegrate.
I had this with a grilled chicken breast I had coated in the same paste.
