What is the reason behind testing an hour after food then testing 2 hours after, if i test an hour after and its gone up 4 what is the reason for doing the 2 hour one, if its gone up 4 in the first hour then i should be changing something, is that correct.

I would just test once either 90 min or 2 hrs after eating...

The idea is to determine which foods send the BG too high (and too soon) in order to try to eliminate 'spikes' in BG, since 'spikes' are supposed to be the main culprits in causing diabetic complications eg retinopathy.

I’m with Martin, test before the meal and 2 hours after, track your results in a food diary and you will soon see trends and work out what food works best for you or what needs to be tweaked and repeated until you get it right :D
