Noticed today the supermarkets are brimming over with Lindors and Ferrerro Rocher and goodness knows what else in anticipation of those that do the whole Valentines Day malarky buying them so just thought it would be fun to see what diabetic friendly treats we all may be able to have ?
How about a home made chocolate and cherry mousse. Very easy I promise.
100g chocolate (I use Lindt 90%), 4 eggs, 20ml cream, 100g cherries (pitted), 50 ml Amaretto (or Brandy)
Raspberries are a good alternative to cherries, but don't soak these as they go mushy
Soak cherries in Amaretto, or Brandy. (This can be drunk with the pud but Amaretto does contain some sugar)
Separate eggs and whisk whites to stiff peaks.
Melt chocolate (bain marie or microwave)
Let choc cool for a few minutes then stir in the egg yolks and cream
Fold in the egg whites.
Transfer to 4 containers (heart shaped if you have them), then cool in the fridge for at least an hour.
Serve fruit on top
...................About 8g of carbs per portion (cherry), 5g per portion (rasps)
Melt dark 200gm dark chocolate (80%) minimum with 2 teaspoon coconut oil. Pour into lined baking tin and spread evenly with palette knife.
Sprinkle on coconut flakes, nuts, goji berries etc and place in fridge for 1 hour. Cut or break into shards. I guess you could pour into heart shaped moulds if you want.

I stick with Lindor really - 5g carbs for a ball and that's fairly consistent across the flavour range. I keep a shoebox full, and at the rate I eat them, they'll last me the whole year
