You have prompted me to get some.
 
Lovely roasted in the oven with some quartered red onions and any other veg. Do in a metal not glass dish sprinkled with olive oil, salt and black pepper and garlic if you like. Don’t crowd them as they’ll stew instead of roasting. Gorgeous and can be eaten cold on sandwiches too.
 
I eat them raw too but nice to have alternatives. I put them in all my salads.
 
LOL the only reason I didn't buy any was simply because I had no idea what to do with them.

That sounds lush, might try that at the weekend with a nice piece of cod (for me) and chicken (for the OH)
 
I like them grilled then filled with cous cous & king prawns cooked in chilli and garlic.

This has made me want to go buy some!
 
Try a stir fry of mushrooms sweet peppers and courgettes, or even better do roasted with goose fat.
 
I have a Stir-Fry nearly every night. Lots of veg with all the sauces 35g of noodles 😉
 
Have them stuffed with a mince meat concoction of some sort (depends what is in the cupboard) then topped with a bit of grated cheese and baked for about 20 mins. Boil peppers first for 8 mins just to soften.
