Super fudgey brownies

Type 1
Haven't tried this recipe myself yet as only found it last night but thought it would be worth posting 🙂
Ingredients
3 free range eggs
25g raw honey
120ml coconut oil
50g coconut flour
20g cocoa powder
1 Tsp vanilla
Method
Pre heat oven to 160-170c
Crack eggs into a large bowl and add ingredients in order as listed above
Mix together until well combined
Pour into a greases silicone loaf tin and bake for 20 minutes
For maximum fudginess remove from the oven and place in the freezer for 10-15 minutes
Slice and serve (can be stored in the fridge)

If anyone gives it a go please do post how they went 🙂 x
 
What's it cut into, not that many from a loaf tin .... 8? less than 5 each? Not at all bad, that.
 
Didn't say how many it served so I went for if 6 were made so works out at 6gish x
 
I would love to hear how this turns out as I’ve not had much joy baking with coconut flour. Can you use something other than coconut oil I wonder as that’s not meant to be terribly healthy I’ve heard.

I struggled with coconut flour but am now converting my Mary Berry recipes. As a basic rule: 1/3rd of usual/almond flour, double number of eggs and 1 tbsps more liquid works quite well. If you want a brownie recipe which is a bit naughty: chocolate rather than cocoa try Nigella flourless brownies and just replace sugar. Very yummy
