Hey everyone - hope we hopefully had a pleasant bank holiday (it was somewhat sunny?!?) 🙂

Just wondered if anyone would like to share some summer-y kind of recipes? Looking to shake up my work lunch a lil bit 😉


Personally, in summer I love a 'chopped' salad, but would love to know what other various summer-y foods you're eating and enjoying 🙂

I have been playing around with buddy bowl type meals, love the idea going around on some pages where you prep a few days lunches in jars and how they keep well. I love ideas around cous cous and quinoa but use pearl barley instead, there’s a lovely risotto on the DUk website that’s made mushrooms that I think could be made as a salad!

Oh this sounds so yummy - I love mushrooms, so will check out that risotto and see if I can salad-ify it!

Haven't had peal barley in a while, I think if I'm remembering correctly it's got a really nice flavour and texture (not a quinoa fan personally, so any alternatives always welcome hehe...)

It’s yummy, you could tried swarma mushroom (sorry if spelled wrong) spicy pieces instead of a risotto. I find the recipe needs more stock than in recipe but I like soft risotto, it’s got a more earthy flavour and bit nutty plus so cheap to buy plus could book in slow cooker.
I love cous cous but hurts my tummy but you could make a cous cous style pot? Chopped peppers, tomatoes, red or spring onions, tuna or chickpeas or feta cheese, so many options, happy to chat more, was a chef so happy for ideas to be extracted from heat addled brain!

I also like lots of Ottolenghi’s veg recipes, and I love homemade Pesto.

Homemade pesto sounds amazing :O And I doooo like Ottolenghi...even though his recipes do sometimes require some ingredients I -may- or -may not- have ever heard of 😛 (black limes, who knew?)
 
Ottolenghi got me completely obsessed with za’atar and pomegranate seeds :D My favourite book is Plenty, but there are lots of recipes online for free. Veggies and salads with real zing😎 Meat too for those who eat it.
