Summer Chicken for 1, is an intensly tasting chicken breast, very moist and a good accompanyment to any main meal. I have cut out salt from my diet and have found that using things like Chives and fresh herbs, takes away the need to season with salt. If you want to add salt it's up to you but I hope you enjoy this recipie
Ingredients
1 small chicken breast with no skin on (if you wanted to cook this for more than one person, just increase the ammounts per person.)
Handfull of fresh sage leaves, washed and chopped
1 Rasher of smoked back bacon
2 Tomatoes cut in half
1 Tablespoon chopped fresh chives
Black pepper to taste

Method
1)Take one small chicken breast and cut a little pocket in the side, stuff the cavity with fresh sage
2) Wrap the chicken breast in one rasher of back bacon
3) Halve the tomatoes and sprinkle on the chives
4) Season chicken and tomatoes with the pepper
5) Place in a small oven proof dish and cover with tin foil
6) Bake in the oven for 10 minutes at 180dc or no6 gas 120df
7) After 10 minutes, take chicken breast out of parcel, tip away juices (they will have the fat from the bacon and cooking liquor in it) put the chicken and tomatoes back in the oven uncovered for another 10 minutes until slightly browned but cooked through.

Serving suggestions
I did mine with a crunchy mixed salad and no carbs as this was for an evening meal, but you can add brown rice, couscous, steamed vegetables it's up to you but enjoy it.
