I love aubergine especially fried taste like chips,never tried em baked,but can't stand them boiled,Last night I tried something new. Aubergine sliced into circles, then baked with a little olive oil, on baking paper, for about 10 mins. Then turned over and topped with a slice of tomato. Baked for another 10 mins. Then topped with cheese, I did some with cheddar, and some with red leicester. You guessed it, bake for another 10 mins, till the cheese melts and bubbles. They looked amazing and tasted delicious! Will definitely be making them again. We had them with pork chops and baked swede chips.

Hemsley &Hemskey cannelini and tomato lasagne is a regular favourite. Uses ricotta and egg as bechamel alternative and courgette instead of pasta. I’m our house Mr enjoys it so much we hardly ever eat beef lasagne now.
