Hi all - anyone got any suggestions for veggies? I'm fine with eggs, milk and cheese. Of course there may already be a thread with this info, but I haven't been able to find it. Thanks. Mike

Do you mean suggestions of vegetables or meal suggestions for vegetarians? If the latter, search for my posts in the various food threads and you’ll discover what I eat.
 
Last night I tried something new. Aubergine sliced into circles, then baked with a little olive oil, on baking paper, for about 10 mins. Then turned over and topped with a slice of tomato. Baked for another 10 mins. Then topped with cheese, I did some with cheddar, and some with red leicester. You guessed it, bake for another 10 mins, till the cheese melts and bubbles. They looked amazing and tasted delicious! Will definitely be making them again. We had them with pork chops and baked swede chips.
 
Anything green & leafy is good. Spinach, cabbage, sprouts, kale, etc. Peas & carrots in moderation, cauli & broccoli good. Avoid the starchy ones, though things like celeriac, butternut squash & turnips aren't too bad.

I love aubergine especially fried taste like chips,never tried em baked,but can't stand them boiled,

What I do with aubergine is cut them into chips & coat them in egg, ground almonds & grated parmasan & bake them in the oven. Come out lovely & crispy.

Mrs Eduad got Hugh Fearnley Whittingstall's 'Much More Veg' book at Christmas and absolutely everything we have tried from it has been cracking!

There's one which involves various roasted veggies with slices of apple and thyme that could possibly be adapted depending on how well you cope with different things. The original has potatoes in skins, but reducing their number and/or swapping for new potatoes/sweet potatoes/cubed butternut squash/celeriac might work well. It has crispy Kale over the top, and the sweetness of just a few slices of apple in is are amazing!

Actually, just look it up & carrots have less carbs than butternut squash. So, I shall change my statement to 'in moderation'.:D

Sometimes it's not just to total carbs though is it. It's the way they are absorbed, and whether some of the technically available carbs get absorbed at all.

Not that I think GI is always reliable, but Carrots have a GI of 70 (high) while Butternut squash is only 50 (medium or low depending on where you look). Which suggests that Butternut Squash is still a pretty useful component.

Has anyone tried butternut squash crinkle chips? I got them ready prepared fresh in Morrisons. They shrivel up to nothing, like little worms, when you cook them. I will be sticking to swede chips, in moderation of course 😉

Hemsley &Hemskey cannelini and tomato lasagne is a regular favourite. Uses ricotta and egg as bechamel alternative and courgette instead of pasta. I’m our house Mr enjoys it so much we hardly ever eat beef lasagne now.
