SugarFree Londoner Flaxseed bread & Katie Caldesi’s country-style loaf

I tried both of these and they were a flop, ended up dense and failed to rise. The SugarFree Londoner Flaxseed bread I had to bin and the Caldesi loaf was just barely edible and a bit better. Interestingly in the video demonstrating the recipe the Caldesi finished loaf was a much much lighter colour and did not reflect the dark flaxseed she used at least in the video, or indeed how mine turned out so it must have been a different loaf with different ingredients possible golden flaxseed.
Sugarfree Londoner, Katrin Nürnberger must not have been happy with me as I left a review about my experience with her recipe which was promptly removed from the site! I also moaned about the ads littering her page which made following the recipe (on an iPad) confusing and frustrating when figuring out what I needed to do. But I did make sure I measured everything out carefully as I always prepare this first.

So has anyone had better luck with these recipes? I've just received Golden flax meal as opposed to the darker flax meal I used and may try again. Both people have some interesting recipes so don't let me put you off. Baking low carb bread seems to be a challenge, I've not had problems with baking normal bread before. The best bread so far has been the Fat Head Dough balls on the Freshwell Low Carb site, they were amazing but so expensive to make!!
 
Have tried no end of Sugarfree Londoner recipes, mostly with great success. Her cakes, keto breadcrumbs and more are a godsend.
Not bread recipes though, as I’ve given up with all low carb bread recipes containing flax seeds etc as they are mostly horrible!
The alternative is to buy horrendously expensive pre made low carb bread, which again is either like rubber or has a weird taste.
Having said that, I now buy Panda flour, not cheap but so easy to bake with and makes fabulous bread, rolls,wraps, pastry and cakes.
Highly recommend their website with new recipes constantly added.
 
I've made a few sugarfree londoner recipes with mixed result. I made a bread using Quark that was more like cake and a lemon cake with almond flour that was nice. I did try a recipe of naan bread using coconut flower but it was vile.

I've made bread using Caldesi recipes, but not that one. Their rolls are decent (Almond, Flax, Coconut flour and Psyllium) and I used to make them a lot, and they have a recipe for bread using Spelt in one of their books which is very nice. Too nice, as I can eat half a loaf in one go. It's low carb, but more that most of their recipes.

I've bought a few pre-made low carb loaves, but they always seem chewy. The Caldesi Spelt bread is about the best I've tried and it was a lot like real bread.
 
Not tried these specific recipes but I make my own flaxseed bread and am happy with it. I use much less hot water than in web recipes and add egg white and olive oil instead (+ herbs, garlic, cheese, chili and other stuff as required). I don't aim for a classic loaf due the the issue of getting a hard shell on a wet sponge! I just flatten it all into a large backing tray and make one giant slice and then cut it up once baked. My bacon butties never tasted so good.

@Kernow-Debra do you have a recipe link which uses the Panda flour for breads pretty please?
@harbottle Will try a few more Caldesi recipes but using solely spelt did spike my glucose, was it a mix with other types of flours?
@Jasmin2000 You know what I'm to ask don't you? Would you have the recipe you use? Does your bread rise or is it dense?

Hope you can find one that works for you.

Reminds me of my attempts at vegan Yorkshires. Worked through several versions until I found one that really worked.

Gave the recipe to a friend - complete disaster! Never worked for them at all!

It is spelt with almond flour and oat bran.
 
Hi @FGFlan, someone on here posted a recipe a while back for realistic bread using Vital Wheat Gluten and Golden Linseed, I tried it and while it came out OK, I felt it was a bit elastic. I have since played around with the recipe and the attached is my version that seems to work (not the world's greatest baker) have a try and see what you think. Although if you don't like gluten then possibly not a good idea :D

I have a successful recipe for bread, which fails completely in a bread making machine.
Way back I used an ordinary bread mix to make croissants and the technicians at Allied Lyons were perplexed because they used the same recipe, but not the same technique and failed completely - there is often a bit of magic in the making of food in particular, where some small factor makes a big difference - using ingredients warm or cold, chilling the mixture once prepared they all can take effect.
