Knowing I've been eating too much ice-cream lately due to the lovely weather, I came up with a home made ice-pop.

I use the Hartley's Sugar Free Jelly powder sachets - I know they don't raise my BG's

Using an ice-pop mould, measure just enough water to fill the moulds and make the Jelly with that water - fill the moulds and put in the freezer.

Tah-dah - jelly icepops

They're not like magnums or a 99 but they take the edge off for something cool on a summer day.

They sound refreshing and more importantly for me Easy to make!!!
