Stress-busting cake

I had a stressful morning trying to sort out an email that was not working, so I used one of my cognitive behaviour tricks, baking a cake helps me forget stress.

Recipe:
One small apple - 2oz
One small carrot - 2oz
Rye flour - 4oz (It would have been wholemeal but I had run out)
Sugar - 2oz
Olive oil - 2oz
3 small eggs
baking powder.

Core but not peel the apple, top and tail the carrot and whiz in the food processor until it begins to cling together. Add the sugar and oil and mix until no lumps. Add the eggs and baking powder and mix to smooth.

I baked in two small long tins.

I like the sweet aftertaste from the apple/carrot and it seemed more satisfying than a regular cake. Anyway, one tin disappeared before it went cold thanks to helpers. I am just afraid it might seem dry tomorrow.
 
Sounds a bit like my semi famous banana bread made with natural applesauce, bananas obviously and sultana, ground almonds and wholemeal flour. Nobody believes there's no refined sugar in there and it's vegan because it's made with olive oil and without eggs. Hmm might have to make a batch at the weekend 🙂
 
Is Rye flour important? or may i substitute with another type of flour?

He throws the flour away presumably, because he hasn't said to put it in !

Do you perchance sling it in at the same time as the baking powder?
