500g fresh strawberries - de-stalked and blitzed and sieved
600ml water
5 sheets gelatin (or 11g powdered gelatin)
20g Splenda (or equiv)
Bring water and splenda to the boil and simmer for 5 minutes until dissolved
Allow to cool and add the sieved strawberries
soak the gelatin for 5 minutes in cold water
Heat a cup of the strawberry mixture and add the gelatin and bring to a simmer (do not boil)
Allow to cool, put a few strawberry pieces in and put in fridge to set
I recon 8g carbs per 100g of strawberry equates to 40g carb per 1.5 pint jelly (eat what you like).
Good for using the not so good looking strawberries (the ants seem to be eating mine). (how many carbs in an ant?)
