Relationship to Diabetes
Type 2
This is my own recipe.

INGREDIENTS
1 small onion chopped
1 medium carrot sliced in small lengths
Small Broccoli florets
Small Cauliflower florets
I large mushroom sliced
A large handful of Spinach leaves with stalks cut off
Sweet Chilli pepper
Red bell pepper.
2 large eggs
1/2 Small chicken breast pre cooked day before.
Small tin of chopped tomatoes.
Seasoning:~
Light Soy Sauce
Black pepper
Dried mixed herbs
Fresh corriander
Rapeseed oil.

METHOD
Prep all the veggies by cutting them into small pieces and rinse with cold water then put aside in a bowl
Whisk the eggs
Using a Wok, add 30mls of Rapeseed oil.
Put the chopped onions in the Wok & fry on a gentle heat til softened.
Add the broccoli florets; cauliflower florets; sliced bell peppers; sliced Chilli pepper; sliced mushrooms; add mixed herbs, black pepper; freshly chopped coriander; and mixed herbs. Mix them together and cover (I used a glass stock pot lid) and let simmer for about 5mins. Stir again & cover.
Whisk the eggs then add them to the vegetables, stir the mixture to cook the eggs. Turn the heat down. Add 15mls Soy Sauce & cover.
In the meantime heat a plate. I do that in the microwave.
Pour boiling water into a small saucepan and add the Spinach. Heat for 3mins or until cooked. Strain the water off.
Slice the chicken breast.

Serve the stir fry, chicken & spinach on a warmed side plate or pasta dish. I used a side plate with portion size in mind.

PS. I forgot to add the tomatoes!!!o_O Aarrgghh!
