At risk of diabetes
I haven’t been here for a few days….after a really positive start after my recent diagnosis as pre-diabetic my resolution has waned. I haven’t fallen off the wagon completely but I am craving carbs and ice cream for example. I had been making really interesting salads with protein but now I can’t face another lettuce leaf or a carrot! I know this change in my diet is not something I can pick up or drop as I please, but in many ways knowing that it is my health at stake seems to make it harder. I know this is crazy and I am sorry to whinge but I needed to get this off my chest!
 
There are a lot more interesting leaves other than lettuce that you can use in salads, Spinach, rocket, watercress, pea shoots, shredded cabbage, red or green, add some mangetout or sugar snaps , peppers, olives, avocado, tomatoes.
You could have some coleslaw.
You can use all sorts of veg in stir fries with whatever meat or fish or tofu added with some soy sauce and a spoonful of peanut butter and a touch of chilli for a pretty authentic satay.
