Spiking with chickpeas

hi all

Still newish to T2 and have changed my diet since I found out.

I’m veggie, have been since I was 18 (over 30 years) but obviously not a healthy one lol

Anyway, I made myself some baked chickpeas which were lush but they have spiked my BG, and I was doing so well . Gone from 7s up to 11s

Does anyone else find they do this to them?
 
Yes, and it meant the end of hummus and blocked off a chunk of my Indian takeaway menu. Getting your diet organised if you are a real strict veggie is not easy because much of your energy comes from carbohydrate and you have to sort alternatives. Check around the recipes section for thoughts and ideas.
 
I have always found it odd that what spikes one person, doesn't spike all diabetics. I can manage chickpeas fine, most of the time, yet if I even look at pasta or rice, my BG enters the stratosphere! It just isn't fair, I liked both pasta and rice!

Incidentally, I too am a veggie and found at first that it was much harder than it seemed for other diabetics who were meat eaters. Then I discovered the lie we have been told for years about all fats being of the devil! They are not and in fact they can be very useful to help suppress appetite, or at least that is what I have found. 🙂
 
Me too - any legume seems to push me high and keep me there longer than would have seemed likely. I can have runner beans or peas in moderation, but need to be cautious.

I’m hoping that if I try a different variety it may not spike so high. I miss crisps and really wanted these for a snack

So do you use cheese as a snack? I don’t like cheese uncooked - taste and texture, but do like it cooked. I like mozzarella uncooked, and I like cream cheese too. Can I have these?

No not any more as I do not do dairy anymore, not done for years. I find the dairy industry to be very cruel, or at least all types I have seen. Maybe not so for the smaller producer, but still... I am not in any way a normal Vegetarian, have been a Vegan on and off for years, not eaten any meat in over 30 years and do not miss it, no dairy for about 25 years. My problem is that I used to love fishing and have fallen off the Vegan wagon several times after having a hankering for fish. I believe that if you are willing to kill something and prepare it for the table, then you should fill your boots as it were. I doubt many people would eat meat if they had to kill it themselves, even if only having to do so occasionally. Sorry, rant finished. 😳

As for fatty snacks, I choose mainly nuts and a vegetarian pate that you can get in Asda and elsewhere. You have to be careful which nuts you get, because some of them are high carb, but Almonds in particular are great! The pate is very good on cracker breads and low carbs. I also like to have boiled eggs, ( organic, free range, ) just nibble them. I am also afraid that I am a bit of a crispaholic, high carb but very satisfying... 😳

I would say that cheese is fine, as long as you do not eat pounds of at once, as it will still make you fat! I cannot remember which, but some cheeses are worse than others. 🙂

I'm trying tinned butter beans tonight as I got them for Mum but I have a feeling they will spike me...I will be making a note. It's all in the interests of science is my excuse. Dunno why I want them really as they taste a bit like I imagine mud would. 🙂 Haven't tried chickpeas yet.
 
I can’t stand butter beans but good luck. In the name of science we had a takeaway last night and yes I did spike my BG but it’s come down.

I made a divine spinach and mushroom crust less quiche for my tea tonight. Was lovely.

Very true, even over two years after diagnosis, I still have so much to learn, which is partly why I returned to this forum, after a long break. Which brings to mind a question which only occurred to me last Friday... 🙂
 
The butter beans spiked me so no more. Not a fabulous taste anyways, won't be hankering after them. I'd rather have my favourite Brussels Sprouts.
