Just made this today and as a consequence will never buy the New Covent Garden variety ever again! (assuming it ever appears on the supermarket shelves again).
1) Soften 1 onion, 2-3 chopped cloves of garlic, 2 small/medium carrots, 2 small new potatoes (any veg really) and 5 chopped rashers of smoked bacon (remove the fat & rind) in 2 tablespoons of olive oil for 5-10mins or so.
2) Add a generous teaspoon of cumin and another generous teaspoon of coriander (I used the leaf).
3) Add 200g of split red lentils (the recipe said 150g, but I decided to ignore it!) and 1 litre of vegetable stock.
4) Add pepper to taste (and salt if you didn't have any in the vegetable stock).
5) Simmer for 20mins and liquidise when nicely cooked.
I had to keep sampling the result! It was delicious. 🙂
