diced chicken, a little chorizo, small onion, diced pepper, mushrooms, asparagus, cauliflower rice. Add spices to your own taste.....yummy 😛
 
How do you make cauliflower rice? It's expensive in the shops.
I bought a cheap food processor and just put the cauliflower in and whizz it :D don’t over do it or it goes to mush, short bursts are best
 
Yes, whizz the cauliflower up until it resembles rice. Chuck some hazel nuts or walnuts into the processor at the same time for a bit of mouth interest, and spread it on to a baking sheet and stick it into a hot oven until it just starts to brown. Delish🙂
