My rabbit casserole. City folks might use chicken, pork or gammon instead.
Ingredients
1 rabbit cut into chunks, leave the bones in, or
8 chicken thighs, skinned but not boned, or
1 kilo pork/gammon ham chopped into big chunks
2 large carrots roughly chopped
About the same amount of neep (that's turnip in English), ditto
1 large onion ditto
1 large leek ditto
1 cooking apple. Yep, you guessed it, ditto
1 teacup cider or apple juice if you must
3 teacups chicken or vegetable stock
2 tblspns oatmeal flour (I'll explain how to make this in a mo)
1 tblspn mustard powder
2 tblspns olive/vegetable oil
S&P to taste
Pre-heat your oven to gas mark 6/180?F
If you have a coffee mill or spice grinder, put the oatmeal in it and grind to a fine powder, i.e., oatmeal flour (I tried this with a chicken casserole the other day and it work quite well for me and doesn't seem to bother my BGs). You can use plain flour if you want.
Put the flour and mustard powder in a large food bag and add the meat. Have a good boogie about the kitchen till the meat is well coated. Heat the oil in a large frying pan and carefully brown the meat then set it aside while you prepare the rest. Add the onion and soften it then use the cider to deglaze the pan, add S&P now. In a large casserole (with lid) place a layer of veg, then a layer of meat till you run out and pour over the juices from the pan and the stock. Place the casserole in the oven without lid for about 15/20 minutes. Lastly, turn the oven down to Gas mark 3/140?F and put the lid on then go away and knit a jumper or paint the shed. Come back in a couple of hours and it should be ready.
