This diet thing is going to be a challenge to me !.

I dont drink or eat dairy so I eat and drink a lot of protein rich soya.
So will this affect my diabetic diet?.

As long as the soya milk is unsweetened then it will have minimal effect on your blood sugar levels, so it is an excellent alternative to cow's milk 🙂 Diabetes is mainly concerned with carbohydrate, particularly those which convert to glucose quickly in the blood, such as sugar and white flour products. Most people are recommended to follow the GI or GL diet as this offers a way of combining foods that release their glucose slowly. Here are two recommended books:

🙂

Yes I drink unsweetened. I am lucky really I rarely have anything sugary.

Vegan chocolate is usually dark plain chocolate and is very rich so if I do have any (rarely) I can only eat a small square of it.

I have had to stop making cakes and pastry. which is sad, as I love baking.

You have a head start on a lot of people with the milk and the chocolate 🙂 Don't feel you need to give up your baking or all the things you love. The key thing with diabetes is moderation, and making certain things occasional treats rather than frequent additions. Eating something like a piece of cake with a meal will mean that the other food will slow th digestion of the cake so it doesn't have such a profound effect on you blood sugar levels. It can be tricky at first, and there is a lot of trial and error discovering what you can tolerate, but some hard work in the early stages will mean you feel far less restricted in future. 🙂

Hi Veganlass,
there's no need to give up your cakes or baking 🙂 Just use some alternatives. i.e, replace some of the flour with ground almonds same as sugar replace it or some of it with artificial sweetener. Things like this bring down the over all carb count quite a lot.
As Northerner says eating cake as part of a meal slows down the impact on your blood sugars as well.

Thanks Pumper Sue, good idea that to use almonds.

When I make a cake I usually give half to a friend, but she is now on a diet!.

Instead of hard fat in cakes I use veg oil and obviously no egg.
