Ingredients (serves 2)

2 chicken breasts
Milled golden linseed
Ready grated parmasan
Cajun spices
Paprika
Cayenne pepper
Pinch of salt
1 egg

1. Slice chicken breasts longways. Each breast can be cut into 4 goujons.
2. In a bowl, mix together linseeds, parmasan, spices & salt. Use as much spice as you like. I didn't measure.
3. Beat egg in another bowl.
4. Dip goujons in egg, then into spice mixture & lay on oven tray.
5. Shove in oven & bake for 30 mins.

Serve with a garlic mayo dip & salad.
 
Bought mine from Aldi. They sell the whole seeds in Tesco, but you will need a grinder.
 
Holland and barrat sell it too, and most supermarkets, but it's almost always labelled as flaxseed. I buy it to add to porridge because it's nicely nutty and very nutritious. Might give that coating a go, I make halumi goujons instead of chicken, but it sounds right up my street 🙂
 
The coating comes out perfect & crisp. Virtually indistinguishable from breadcrumbs.
