Ok so in Goa I experienced a healthy recipe for a soup called "manchao" here is the recipe..

You will need to make a serving of two people.

5 sprouts/greens(small handful) finely chopped
2 carrots finely chopped
8 Brown button mushrooms finely chopped
6 cloves of garlic finely chopped
4 green chillies finely chopped
1 chicken breast (no skin)
Soy sauce
Root ginger
Chicken stock cube
Fresh coriander

Method.

Chop all veggies and mushrooms finely and fry on medium heat using olive oil.
Use 750ml of water and add stock cube/pot and bring to boil.
Chop chicken breast into small slices and fry with veggies and mushrooms
Chop chillies and garlic and add to frying pan with chicken veggies and mushrooms.
Once water is boiling add all contents of frying pan to water with chicken stock cube.

Once you add to stock lower heat and simmer after 10 mins add soy sauce and grate root ginger.
Simmer for final 20 mins.

Serve with fresh coriander sprinkled into soup.
