I've stumbled upon this recipe, but I found that has some quirks on ingredients.

https://www.diabetes.org.uk/guide-to-diabetes/recipes/soda-bread-pizzetta

First of all I think that extra virgin olive oil is a must, using sunflower oil is both less tasty and less healthier.
Next I think that instead of sweetcorn that has a GI of 60 the first topping choice for me should be anchovies or tuna.
I'm saying it with a bit of tongue-in-cheek, of course 😉 But really tomorrow I have a workplace party at 17 o'clock with the CEO and the CFO, and of course it will be full of cheap pizzette and fried potatoes, without any veggie in sight...
I feel depressed.
😱

Wow! what is that 17percent carbs - not on my menu.
Take in some cooked chicken, ham, salad, cheese - maybe a few nuts and anything else low carb you have in the fridge - let the chiefs have any leftovers. Or you could look up 'fathead pizza' - it is supposed to be good.
