Smoked fish tart / pie /

Get about 20 to 24 oz of mixed smoked fish
A pasty case of your choice (or roasting dish)
Lightly cook the fish in 3fl of milk for about 2 to 3 minutes including; herbs - pick from - mace ? nutmeg ? tarragon ? parsley - bay leaf, depending on the flavour you want.
Remove fish from milk , KEEP the milk.
Beat 2 eggs add pepper, and any other seasoning
Heat milk about 5 on a standard hob top add in yoghurt or cr?me fresh or cream, heat until simmering (not boiling like mad) pour into eggs and beat well.
Put fish into pasty case add in a selection of vegetables peas - sweet corn - peppers ? capers.
Pour over the sauce

Bake in oven. for about 30 minutes, if you use a tempteture probe look for about 75 C if not make sure that it is set.



If you prefer you can put the fish and sauce in a roasting dish and cover with creamed potatoes. Put less cream ? and a little more milk
 
As a variation, we tend to use whatever fish or shellfish we have - a mix of any combination of small pieces of smoked and unsmoked fish, shrimps, prawns, mussels etc, adding whatever comes out of garden eg onions, garlic, leaks, chives etc placed with milk in a ceramic dish and tend to use a lower fat option of mashed potato topping rather than pastry case. Then put whole dish in oven and cook for about 30mins. Works best where dish is deep enough to have at leats 1 inch deep fish & milk layer, rather than too shallow and wide.
 
Good friends of mine used to run a fresh fish buisness (they're retired now) and when my kids were little they used to sometimes give me the off cuts on a Friday. I used to make a dish similar to this for a cheap tea for the family. Of course it wouldn't be a cheap dish now I have to pay for the fish! XXXXX
 
Still cheap if you buy fish when it's reduced on Use By date - either eat on day or freeze for a few days / weeks. That's why no two fish pies are ever the same! Most supermarkets sell cheap packs of smoked salmon offcuts, whci are ideal for a bit of extra colour & flavour.

What a wonderful receipe, I like that. I am going to try and do it this weekend
