I don't quite know why I bought a white loaf instead of Burgen, but I did. Then I thought 'oh well I'll eat a slice and see what happens' (all in the cause of research:D)
Two days of a slice of white toast with my soup. Result... no bigger spike than usual!

That would seem to rank fairly high on the weirdness scale. Is it because of my strange interior or what?

Have to say, the colour of the flour etc makes very little difference to my BG as long as I get the carb count and therefore the bolus right. Doesn't 'hit' me any faster or slower. To my innards a carb is a carb is a carb and the only thing that slows it down in fat. Why did you think it would?
 
Have to say, white bread really does spike me quicker than Burgen 😱 Thankfully, I don't actually like it and prefer Burgen, so win, win for me! 🙂 I think there are a lot of things where the reaction doesn't reflect the GI - porridge is probably the best example 🙂 Perhaps you should try that next Susan! 🙂
 
Had lunch at 2 ish, sandwich made with 2 slices of a Hovis 'Best of Both' large medium sliced loaf, and some bits (a savoury egg, a quarter of a mini pork & pickle pie, 2 cheese and bacon 'sticks') gone up from 6.1 to 7.3 at the mo. Will check again in a bit .....
 
Now 11.3 - we'll see how long that lasts.
