Relationship to Diabetes
Type 2
Serves one:

1/2 chopped onion
2 oz Rice(cooked with sprinkle of thyme and veg stock)
2 oz celery chopped
1/4 pepper chopped
garlic
2oz carrot chopped
2oz garden peas
2oz chickpeas.(I use tinned)

Using spray veg oil. fry onion,celery, pepper and carrots.
Add chickpeas and cooked rice. Mix well.
Put into oven proof dish and cook at 200c for a few mins till rice begins to brown. Serve hot.

Probably tastes wonderful.

I don't want to be too negative but earlier you mentioned high BGs. That is about 80gms carb; have you tested an hour after eating a serve?
