Sausage and bacon hot pot a good winter warmer

One pack of sausages - Cut sausages into inch chunks then oven bake.
One pack of bacon. Cooked
I tend to give the sausages about 30 minutes in the oven, after 10 minutes I add the bacon,
A large onion cut up half fine and half course
Peppers if you like them

cans or packs
Butter beans
Borlotti beans
Black eyed beans
Haricot

I have used
Adzuki
Cannellini
Flageolet
Kidney Beans

but prefer the 1st mix for this hot pot.

1 Chicken oxo cube
2 Cans of tomatoes
Garlic (I like a lot of garlic but!! )
Part boiled potatoes enough to give a top cover.

I use 2 pans frying pan and casserole

Put cans of tomatoes into the casserole and turn on medium heat,
Fry onion and add to tomatoes, add in garlic, peppers, courgette oxo cube
Add in selected beans I tend to prefer 2 tins of butter beans one each of Borlotti beans, Black eyed beans, and Haricot beans, at this point I divide the mix into 2 lots one to cook and one to keep,
Take half the mix and add the sausages and bacon, top with potatoes and put in the oven for half an hour, then check for temperature, if it is 75 degrees I will serve it out.

The batch I keep may go into the freezer for a week or 2, I have never tried keeping it any longer,

Sounds gorgeous Andy - why not add a little chorizo too? Hmmm🙂
 
Be careful on the sausages they can have a lot of filler in the form of breadcrumbs (white of course).
 
It's what goes in your tummy that counts, don't think fridges can get diabetes:D

Pleased this one has your stamp of approval, but then again its savoury so its safe

Its alot more healthier than some things on site is it not Steff ?
 
hee hee I got involved elsewhere on the internet (completely non-diabetic) today with someone complaining about out of date doughnuts being sold and someone else said they were unhealthy. I said I'd rather they ate more out-dated ones and died quicker rather than have a long, lingering, painful death and cos the NHS shedloads. In that way, I said, there will be more dosh to spend on really deserving patients - like me, for instance .....

Those that have met me indicated they were falling about laughing and there has been a sort of terse silence from those that haven't ......

I wouldn't fall out with anyone about food, we all have our own preferences and there's an end to it.

Hi --- I Have used chorizo - salami - peperoni - and a few othe options at times but sausage and bacon give a flavour which more people seem to like,
I have also used chilli's. mushooms do not seem to wok well.

Sounds gorgeous Andy - why not add a little chorizo too? Hmmm🙂
 
Sausages

we are putting 8 sausages in a mix of 3 pints of fluid -- a portion may include 2 sausages some bacon and a mass of beans, I am sure that the proportions should be acceptable to many of us.
