Any like to share their favourite sandwich fillings and mayb talk about the affects it has on their blood sugar levels etc.

Mine are (always on Seeded bread)
Brie and Grape
Cream cheese and grated carrot.
 
When I was buying a sandwich every day for lunch, I used to like a brie and grape sometimes but have to say I don't usually buy grapes to have at home since they're too tempting and the equivalent of eating sugar - and can't buy 3 or 4 to slice onto a sandwich, now can you!

I tend to have protein (ham, chicken, beef, chicken tikka slices, pate, cheese, tuna) plus some salad, and a squib of mayo and a few crisps - we're both retired so I share a packet of C&O crisps or mini cheddars (Red Leics) with my husband as I would find a whole packet too much with a sandwich. It's the same amount of carb whatever I chuck on the carb, so BG results are normally similar. However I confidently predict that there's a lot more activity in your life than mine, if your avatar pic is current!

Yes I know what you mean about grapes. Before diagnosis I would eat them without thinking, in fact the day I was diagnosed suddenly I had eaten an entire punnet of grapes (wonder why blood sugar a few hours later still over 15). Now I am quite happy to slice like 5 on my sandwich and be satisfied.
I do like a crisp sandwich
 
I'm low carb so I don't generally eat bread/sandwiches but I made a chaffle (cheese waffle with beaten egg grated cheese, a spoon of ground almonds, a pinch of baking powder and psyllium husk. beaten together) the other day but because I don't have a waffle maker I used a frying pan and made it into a large crepe type pancake. I then let it cool and used it to make a sandwich with a filling of black pudding, mayonnaise and salad leaves and a couple of sliced cherry tomatoes and I really enjoyed it! I know it sounds weird but it really hit the spot for me!
 
Mine are usually on either hovis or warburtons medium white sliced and for fillings
- sliced ham - with mustard
- tuna (tinned in brine) with mayo, also with cucumber
- salmon (red - tinned) with a splash of vinegar and himalayan salt
- potted beef

Oh for a sandwich! Although I've mostly lost my cravings for bread I still sometimes think how much I'd love a spam or potted meat sandwich in Mother's Pride. Just to remember my lovely childhood in the 60s!

Avocado, Boursin and a few jalapeños

I like sourdough bread and rye bread, but anything non-white squishy and soft will do.
I like peanut butter and banana sandwiches.
 
Ham/beef & lettuce with coleslaw or prawns in salad creme with lettuce on the only bread I can tolerate to any degree which is white sandwich thins. Its wierd but they don't rise my sugars where as a 'normal' loaf (even warbys no added sugar) bread spikes me.
 
I bake my own bread so the “packaging” is not something off the shelf.
I vary the bread from bagels to focaccia to seeded rolls to sourdough and this weekend I made some really soft pumpernickel.
The current favourite is a Greek cheese toasted sourdough. The filling is grated halloumi, crumbled feta, fresh dill and fresh mint plus dried apricots.
But I also like something simple like hummus on pumpernickel (it goes surprisingly well with the caraway seeds) or cream cheese and smoked salmon bagels provided there is plenty of cracked pepper, a squeeze of lemon juice and some fresh salad leaves straight from the garden.
 
Grilled bacon medallions with low sugar strawberry jam on wholemeal or BLT (extra lean medallions).
 
I recently tried brown bread and that made my blood sugar level go crazy. However, other heavy breads such as ryebread or similar seems to work well. It's also very heavy so you feel full and it takes a while to get through. The filling has not changed much for me, ham, cheese and salad.

Mouth watering at thought of those breads.

Fav filling has to be cheese & onion in white bread with thick golden brown crust, mainly eat seeded wholemeal & sourdough breads now but has to be white with cheese & onion, bread generously thick with butter on bottom slice mayo on top with loads of grated black pepper.

Like most filling, cheese & toms another fav as is coronation chicken, hot wise has to be bacon & eggs with HP sauce in soft bap..
 
Just realised no one has mentioned sausage sarnies.
Wonderful with caramelised onion between two white doorstops.
